This drink was created at Nopa, a San Francisco restaurant, and uses cava. Cava is a Spanish sparkling wine, although to my unsophisticated palate, it tastes just like champagne. Regardless, this is a nice cocktail that combines cava and sherry, both of which I like.

- 1 spoon raws sugar or simple syrup
- 1 dash Angostura bitters
- 1 oz dry amontillado sherry
- Spanish cava
- Place sugars, bitters, and sherry into a champagne flute.
- Top off with cold cava and serve.
