Spanish Steak Rub

This is a Spanish-inspired steak rub created by Bobby Flay. The Iron Chef says this is how to make a great steak even greater. I took this recipe from GQ, and it goes great with the sherry vinegar steak sauce they describe.

Ingredients
  • 3 Tbsp Spanish paprika
  • 2 tsp ground cumin
  • 2 tsp dry mustard
  • 2 tsp ground fennel seeds
  • 2 tsp Kosher salt
  • 1 tsp coarsely ground black pepper
  • 2 Tbsp olive oil
  • 4 boneless rib eyes, New York strip steaks, or filets mignons (12 oz. each)
Instructions
  1. Whisk together the dry ingredients in a small bowl until combined.
  2. Brush steaks on both sides with oil; season liberally with salt and pepper. Rub one side of each steak with 1Tbsp spice mixture.
  3. Grill steaks, rub side down, until golden brown (3 to 4 minutes). Turn steaks over and grill for 5 to 6 minutes for medium rare.
Eat with steak. Serves 4.
