These potato wedges are a delicious and (semi) healthy side dish. Soaking them in ice water with fresh lemon juice helps remove excess starch to make them extra crispy in an oven. They're not as crispy as french fries, but these get close. Make sure to cut the wedges the same size, otherwise some will be large and not crisp up as evenly as others.

- 4 Russet potatoes, cut lengthwise into 8 wedges
- 1 lemon
- 1 Tb garlic powder
- 1 Tb dried oregano
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp fresh ground pepper
- Dash of cayenne
- 4 Tb avocado oil
- Preheat the oven to 400 F.
- Places potato wedges in a large bowl of ice water and the juice of one lemon.
- Strain and pat dry the potatoes wedges with a towel.
- Place wedges in an empty bowl and add oil and all seasonings. Massage well.
- Arrange on a baking sheet lined with parchment sheet, or coasted with a thin layer of oil.
- Bake for 30 minutes. Flip each wedge and bake for another 30-40 minutes until crispy and browned on edges.
- Serve immediately.
