Chickpea Salad with Lemon, Parmesan, and Fresh Herbs

I found this in the current issue of Bon Appetit. It's a very easy little dish to put together. With so few ingredients, however, make sure all ingredients are good quality and/or fresh.

Ingredients
  • 1 15-ounce can chickpeas (garbanzo beans), rinsed, drained
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh Italian parsley
  • 2 tablespoons fresh lemon juice
  • 1 small garlic clove, pressed
  • 4 teaspoons extra-virgin olive oil
  • 1/3 cup (packed) freshly grated Parmesan cheese
  • Coarse kosher salt
Instructions
  1. Combine chickpeas, basil, parsley, lemon juice, garlic, and olive oil in a medium bowl.
  2. Add Parmesan cheese and mix gently to blend all ingredients thoroughly.
  3. Season with coarse kosher salt and freshly ground black pepper.

Serves 1-2.
