Salsa Verde

Salsa verde is an Italian classic green sauce made with lots of parsley and olive oil. It is a tasty sauce that can freshen up any simple dish. Make sure to let the sauce sit for awhile to let the flavors meld with one another.

Ingredients
  • 1/2 cup coarsely chopped parsley
  • 1 small clove of garlic, pureed or finely chopped
  • 1 tablespoon capers, coarsely chopped
  • 1/2 teaspoon salt
  • 2 tablespoons sliced almonds (optional)
  • Grated zest of one lemon (optional)
  • 1/2 cup olive oil
Instructions
  1. Combine all ingredients except olive oil in a small bowl. 
  2. Whisk in olive oil to create a rough paste.
  3. Season to taste with salt and pepper.
