Roasted Garlic Dressing

Try this creamy dressing as an alternative to Caesar. It's particular good on a kale salad, which, if combined and allowed to sit for at least 15 minutes, can help soften the tough kale leaves a bit. I found this on the Food Network website.

Ingredients
  • 8 cloves garlic, unpeeled
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup olive oil
Instructions
  1. Preheat oven to 400 degrees. Place garlic cloves on aluminium foil, drizzle with olive oil, and season with salt and pepper. Fold the aluminium foil to create a tightly-sealed pouch for the garlic.
  2. Roast in oven for approximately 30 minutes until very soft. Squeeze out the cloves from their skin.
  3. Combine the garlic, vinegar, mustard, honey, lime juice and salt and pepper in a blender and blend until smooth. With the motor running, slowly add the oil until emulsified.
  4. Serve over salad.
