Try this creamy dressing as an alternative to Caesar. It's particular good on a kale salad, which, if combined and allowed to sit for at least 15 minutes, can help soften the tough kale leaves a bit. I found this on the Food Network website.

- 8 cloves garlic, unpeeled
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon fresh lime juice
- Salt and freshly ground black pepper, to taste
- 1/2 cup olive oil
- Preheat oven to 400 degrees. Place garlic cloves on aluminium foil, drizzle with olive oil, and season with salt and pepper. Fold the aluminium foil to create a tightly-sealed pouch for the garlic.
- Roast in oven for approximately 30 minutes until very soft. Squeeze out the cloves from their skin.
- Combine the garlic, vinegar, mustard, honey, lime juice and salt and pepper in a blender and blend until smooth. With the motor running, slowly add the oil until emulsified.
- Serve over salad.
