Indian Fried Long Beans

Long beans are typically 3-4 times the length of the common green beans and are a common food in India and Southeast Asia. This simple side dish braises and steams the beans, and so at the end the beans should be tender but not overly soft.

Ingredients
  • 1 pound long beans, cut into 1" lengths.
  • 1 medium red onion, chopped
  • oil
  • 1 teasoon chili powder
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon salt
Instructions
  1. Fry the onion in 2 teaspoons of oil until soft, about 5 minutes.
  2. Add the long beans, salt, turmeric, and chili powder. Cover the pan and cook over low heat for 10 minutes, gradually adding 1/4 cup of water.
Serves 2-4.
