Quick meals usually do not turn out tasty meals, but let this recipe be a glaring exception to that rule. If you're in the mood for a pizza -- and soon -- this is what you're after. It's amazing how the simple and familiar tortilla can double as a pizza crust, and one that turns out deliciously crispy.
The key is to use a cast iron skillet, so if you do not have one skip this recipe. It's recommended to use a tortilla that's just the size of your skillet, but I used a relatively small tortilla in my full-size skillet (14") and it turned out great. This is, of course, from Serious Eats.

- Extra-virgin olive oil, plus more for drizzling
- 1 large flour tortilla that just fits inside your cast iron skillet
- 1/2 cup store-bought or homemade pizza sauce
- 3 ounce shredded mozzarella cheese
- Grated Parmesan cheese, optional
- Basil leaves, roughly torn, optional
- Pepperoni, optional
- Kosher salt
- Preheat the oven broiler to high.
- Heat a cast iron skillet over high heat and add a little bit of oil until it heats. Turn off heat and wipe away excess oil with a paper towel.
- Lay the tortilla inside the cast iron skillet. Spread the pizza sauce on top and then sprinkle with shredded mozzarella, using only enough to (evenly) cover about half the tortilla surface. As the cheese melts, it'll spread out. Top with any additional toppings, like Parmesan, torn basil leaves, or pepperoni.
- Place cast iron skill with pizza under broiler for 2-4 minutes, until cheese is melted and tortilla is crispy. Remove pizza with spatula, and cut with a pizza cutter.
