Bangkok Street Food's Stir-Fried Chicken with Basil

Continuing my Thai food obsession is this quick stir-fry that is very typical of Thai street food. It doesn't take more than few minutes to prepare the ingredients and then cook them, but it creates a nice, pungent dish. I wasn't able to find the holy basil that this recipe calls for so I used Thai basil found in my Asian grocery store, and it turned out great. This recipe is taken from Serious Eats.

Ingredients
  • 2 tablespoons vegetable oil
  • 2 garlic cloves, crushed
  • 8 ounces chicken breast, boned and chopped in small pieces
  • 2 big red chiles, chopped finely
  • 2 handfuls of holy basil
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons water or chicken stock
Instructions
  1. Heat the wok on a medium heat. Add oil and garlic, stir-fry for a few seconds. 
  2. Turn up the heat and add the chicken.
  3. Add the chili and half of the basil. Stir-fry for 1 minute, and then add fish sauce, sugar and water or stock. 
  4. Turn down the heat on low. Add the rest of the basil and stir-fry for a few seconds
  5. Serve on rice.

Serves 2-3. Eat before it cools.
