Continuing my Thai food obsession is this quick stir-fry that is very typical of Thai street food. It doesn't take more than few minutes to prepare the ingredients and then cook them, but it creates a nice, pungent dish. I wasn't able to find the holy basil that this recipe calls for so I used Thai basil found in my Asian grocery store, and it turned out great. This recipe is taken from Serious Eats.
Ingredients
Serves 2-3. Eat before it cools.
Ingredients
- 2 tablespoons vegetable oil
- 2 garlic cloves, crushed
- 8 ounces chicken breast, boned and chopped in small pieces
- 2 big red chiles, chopped finely
- 2 handfuls of holy basil
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 2 tablespoons water or chicken stock
- Heat the wok on a medium heat. Add oil and garlic, stir-fry for a few seconds.
- Turn up the heat and add the chicken.
- Add the chili and half of the basil. Stir-fry for 1 minute, and then add fish sauce, sugar and water or stock.
- Turn down the heat on low. Add the rest of the basil and stir-fry for a few seconds
- Serve on rice.
