This is one of my favorites that I make very frequently. Just get yourself a ball of pizza dough (Trader Joe's has good ones) and a few zucchini, and you'll have a delicious pizza in no time. A standard oven cooking sheet is the perfect size for this pizza, especially given the size of typical pizza dough you buy in stores. Once you take it out of the oven and smell it, you'll definitely want eat the entire thing. Also, this is a fun one to make with a toddler if you have one around.
This is modified from a recipe I originally found from a cooking website called Eat Live Run.
Ingredients- Pizza dough (regular or whole wheat can both work)
- 2 large (or 3 small) zucchini
- 2 cloves garlic, minced
- 2 cups shredded mozzarella cheese
- Kosher salt
- Red pepper flakes
- Preheat the oven to 500°, or its hottest temperature it can achieve. Either dust cornmeal on a baking sheet or spray with nonstick spray.
- Grate the zucchinis and wring/press with kitchen towel to eliminate all the liquid. Mix the zucchini with the mozzarella cheese, garlic, and a dash of salt and pepper. Stir well to combine.
- Work the pizza dough into whatever shape you want. Top with the zucchini mixture. Sprinkle some red pepper flakes if you like spice in your life.
- Bake pizza for about 12 minutes or until the crust begins to turn golden and the cheese has started to bubble.
- Cool, slice, and serve.
